<p> Sauvignon Blanc</p>
<p> Sauvignon Blanc is a great white wine for the novice wine drinker. It&#8217;s light, refreshing and easy to drink, but actually has flavors and characteristics that remind people of easier beverages such as citrus and vanilla. If you want to start sounding smart when talking wine, consider the different regions by flavor. <p> Okay so you are a red wines kind of drinker. No amount of sunny days and warm breezes are going to make you drink a white wine. Respect. But choose wisely. A standard Cab or heavy Bordeaux blend can be too hot to handle in the heat. Go light but still rich and earthy with sangiovese. Jammy and a touch spicy, it&#8217;s the grape behind the storied Italian Chianti, although you can by versions from all over the world now. And if little old Italian men can sit outside in the southern heat and down jugs of this for lunch, then by all means you can handle a glass or two. Continue your Tuscan-style experience by matching it with a food that&#8217;s rustic and earthy, like a grilled steak or stuffed mushrooms.</p>

			<content:encoded><![CDATA[<p>A short while ago we reviewed a French Kosher wine costing less than $10. Now we will reviewi the same producer&#8217;s Cabernet Sauvignon, just in time for Passover. As you may remember, the Skalli family started in the wine business during the 1920s in Algeria. From Corsica they journeyed to southern France in 1961, where they were among the first producers of  single variety wines instead of blends. The Skallis make wine in the Languedoc region of southwestern France as well as in the Rh&ocirc;ne Valley, Provence, Corsica, and Napa Valley, California. Towards the end of November, 2011 many but not all of their wine interests were purchased by Boisset Family Estates. Our companion wine is a Napa County Cabernet Sauvignon, also Kosher for Passover, costing about twice as much.</p>
<p> OUR WINE REVIEW POLICY All wines that we taste and review are purchased at the full retail price.</p>
<p> Wine Reviewed Fortant Cabernet Sauvignon Kosher for Passover Mevushal 2006 11.5 % alcohol about $10.</p>
<p> Let&#8217;s start by quoting the marketing materials. &#8220;Tasting Note: Deep purplish/ruby color; spicy black berries, black pepper and minerals with subtle oaky notes; medium-bodied with a dry finish.&#8221; And now for my review.</p>
<p> At the first sips this wine offered plums and some harsh acidity. It was short but a taste remained at the finish; this is not a positive comment. Since I reviewed this wine prior to Passover Japanese rice crackers were on the menu. They served to step up the drink&#8217;s harshness. Slow-cooked meatballs brought out the plums that were lurking in the liquid. And partially tamed its acidity. When paired with the potatoes, the drink&#8217;s acidity was now OK. I tasted chocolate (but not Passover chocolate). The salad composed of broccoli sprouts, cucumbers, orange and yellow peppers, tomato, cilantro, and Portabello mushrooms thinned the chocolate. </p>
<p> My next meal cleared our freezer of packaged Baked Ziti Siciliano that I doused with grated Parmesan cheese. Now our southern France friend was round with light tannins and fruit, namely plums. There wasn&#8217;t much there. Fresh cantaloupe rendered the liquid almost tasteless. When paired with nut cake this Cab was very light offering a touch of tobacco. </p>
<p> The closing meal&#8217;s centerpiece was a baked chicken leg in cardamom, cilantro, black pepper, and garlic. This drink started off well but weakened, except for its acidity. The side dish consisted of okra in tomato and onion sauce over white rice. Now the liquid&#8217;s acidity was tamed. It showed a bit of chocolate and not much else. When our boy met fruit juice candy he virtually disappeared. </p>
<p> Final verdict. I won&#8217;t be buying this wine again. It&#8217;s hard enough to produce an acceptable French non-Kosher wine at this price. And going Kosher can only add to the cost. Double for Passover.</p>

			<content:encoded><![CDATA[<p>The domain of red wines is an exciting, elaborate and wonderful world packed with everything from the nuanced subtlety of a tender South African Merlot to the peppery opulence of Sangre de Toro, &#8220;Blood of the Bull&#8221; from Spain. Typically, many of the &#8220;rules&#8221; of wine drinking have will be cast aside in today&#8217;s world, making it more accessible to everyone, and with the increased demand supply has soared, allowing for very affordable and very mouth watering wine accessible to all.</p>
<p>Still, there are many who feel that the world of wine is just not yet open to them. With so many wines to choose among, where do you begin? How do you correctly delight in a red or white wine and with what foods might they be best?</p>
<p>Let&#8217;s investigate some very fundamental tips to enhancing your pursuit of red wines.</p>
<p>Do not shell out a bunch of hard earned cash on a bottle of wine. Leave that for later, once you have begun to research beyond the brand names and varietals that you prefer. There is so many terrific and delicious wines that are obtainable for somewhere between $ 6 and $ 10 a bottle, that you definitely should not need to pay $ 20 or $ 30 for a bottle of wine, at very least not yet.</p>
<p>Stick with a varietal, for now. In other terms, pick a <a href="http://www.wineofthemonthclub.com">wine</a> that is primarily made from one sort of grape, i.e. a Shiraz, Syrah, Cabernet Sauvignon, Merlot, etc. Attempt to stay away from blended reds to begin with, although they may be somewhat delicious. By uncovering the flavors of the varietal grapes, you &#8216;ll more effectively grasp what it is about the blend that you like. Keep away from flavored wines or coolers that you can find at your local convenience store. These are little more than non-bubbly pop with alcohol in them and can trigger a nasty headache as they are quickly made from the least pure active ingredients. Start with a good Merlot from South Africa, Australia, New Zealand or Chile. </p>
<p>These wineries are typically able to balance cost with quality quite effectively. The reason I recommend Merlot is that of all the red varietals, it is the gentlest, and crowns a broad menu of meals. Reds like to breathe. Open the bottle and permit it to sit for ten minutes or so. This enables air to get at the wine and age it quickly. For that matter, pouring the wine into the drinking glasses and allowing it to sit for 10 to 20 minutes or so accelerates this process. You &#8216;ll find the flavor is much enhanced by this method. Reds at Room Temp and Whites Chilled. A basic guideline that does not in every case apply but is a good guide, nevertheless. Chilling a red gets rid of many of the subtleties of flavor for which you buy the wine at all and slows the wine&#8217;s capability to develop with being exposed to oxygen. Keep them at room temperature. </p>
<p>I touched on previously that many of the &#8220;guidelines&#8221; of wine have been disposed of, or at very least loosened, including &#8216;red wine drunk with red meat or pasta and white wine with fish or poultry.&#8217; Although those are not bad concepts, they simply are not sculpted in stone and at this time waitresses and also the experienced connoisseur will not turn up his or her nose at a visitor who calls for a red with seafood or takes pleasure in a good, tart Chardonnay with a burger. </p>
<p>Merlot with what ? While a Merlot can be a perfect complement for a noodles dinner (even more so if you eat a nice buttery garlic bread), it can simply sit beside a pork chop or fried chicken meal. A Merlot is a beautiful, non-pretentious start to your voyage and really should open the door brilliantly to a sojourn of wine loving. </p>
<p>OK, Now What? Try a few unique labels of Merlot from competing vineyards. Note the variations in style and substance. I&#8217;d suggest sticking to those south of the celestial equator initially. Once you feel like you&#8217;ve tasted a number of Merlots and are familiarized with the differences, then proceed to a Cabernet Sauvignon and begin your journey once more. </p>
<p>I &#8216;d hold off on Shiraz, Syrah, Petite Syrah or Beaujolais until you have a basic knowledge of Merlots and Cabernets, but once you do, then dive in to the heavy, strong, peppery joy of the stronger reds. Once you feel like you really understand and can note the differences of the red varietals, start exploring the blends or the really exceptional <a href="http://www.wineofthemonthclub.com">California red wine</a> varietals. 			<content:encoded><![CDATA[<p>Dionysus, the Greek God of winemaking and wine, has been worshipped for centuries under many names, including the Roman &#8220;Bacchus.&#8221; Followers in the Cult of Dionysus, the original wine club, began celebrating wine, libation, fertility, and the Male God&#8217;s other charms as early as the 15th Century BCE. The Bacchanalia were legendary festivals held several times a year by his followers to honor the god with drinking and many other forms of debauchery that might pale the average contemporary American. Though the order was all but disbanded by conservative Romans and the rise of Christianity, various sects and allusions to the god of wine remain in wine clubs across the globe today.</p>
<p>There are a number of different levels of homage to Bacchus. The most common is including Dionysus as part of a wine club&#8217;s name. Many local wine clubs name themselves things like the Dionysus Wine Society or even simply the Order of Dionysus. They are harmless and often constitute the kind of social drinking club that many people would find interesting. The primary goal of this kind of group is to find and enjoy wines with good people. Sometimes they are snoody and snobby and raise their noses at certain varieties or anything under a given price point. Sometimes they are just an excuse to drink great amounts of wine and see what fun ensues. The important thing with groups like this is to find one that matches a person&#8217;s tastes and character &#8211; there are enough wine groups that there&#8217;s no reason to be stuck with people and a style that is unappealing. </p>
<p>At the other end, neo-cults like the Revived Order of Dionysus do more than just drink a lot of wine and have fun. The leaders of this group do their best to make it the modern incarnation of the very group that caused the Roman senate to ban its Bacchanalia because of its utter debauchery. Various ancient sects of Dionysus worshippers also saw him as a god of many other hedonistic activities. Modern worshippers encourage their contemporary Bacchanalia to take similar form. Behind closed doors they, and followers with varying levels of belief in the actual deity and fealty to the idea of wine-loosened pleasure, pay full tribute to the god of wine and fertility. </p>
<p>Though most of modern society is not ready to embrace the latter form of reverence for Dionysus, contemporary wine clubs of tamer varieties offer many of the same experiences at a more palatable level. There is certainly something about humanity that wants an excuse to be a little irresponsible, to savor delicious food and wine in the company of like-minded friends who share those joys, and to feel like it is acceptable in the name of an ancient and once powerful deity. </p>

Much the way Kleenex and Q-Tip have become household names for facial tissues and cotton swabs, this specific brand of sparkling white wine suffered due to its own popularity, as imitators from all over Europe sought to use the name associated with nobility, exclusivity, and class. And for a long time this situation held. But as the drink became popular with the growing U.S. middle class in the 19th Century, sparking white wine growers and makers in the Champagne region of France decided that they needed to fight harder to protect their exclusive rights to the name. </p>
<p>An 1891 treaty legally reserved the name Champagne for just this purpose. However, even though through both world wars the brand was seen not just as an international treasure but a specific object of pride for the French by most people in the world, the proliferation of the name&#8217;s misuse to describe any sparkling white wine continued. This despite the fact that with international support the French authorities can seize any mislabeled shipment and destroy it to protect the brand. Since the formation of the European Union, which forced all the countries in Europe to come into complete compliance with the treaty, the issue has received more attention. </p>
<p>People now understand, for the most part, that the term Champagne can&#8217;t accurately be applied to any sparkling white wine. This has given rise to the popularity of other brands such as Prosecco. And to be reasonable, there is plenty of precedence and merit to the claim that the brand deserves to be protected by strict labeling regulations. Many other wines enjoy this degree of protection, such that international wine makers often must specify where their wine was grown as well as the variety of grape. </p>
<p>The reasoning is part commercial &#8211; protecting a brand gives owners the ability to market it more effectively and thus charge higher prices &#8211; and part science. Many grapes, especially those used for sparkling white wine, are very expressive of the minerals and elements in the water, soil, and air where they grew. Wine tasters with refined palettes can identify different regions of growth for the same grape and same wine production technique, even when all of them come from within France. So there is certainly something to the claim that Champagne from the specific region of France is physically different than other sparkling white wines. </p>
<p>The reality is that the United States, which produces a fair amount of sparking white wine and consumes a great deal as well, is slow to comply with the regulation. But few would suffer if the country began to enforce compliance. Those who own mislabeled brands will have to invest to change future labeling, but they are profiting from a high-jacked brand anyway, so as long as they aren&#8217;t forced to re-label bottles already in circulation and ready for shipping, it is not unreasonable. And consumers can learn the difference &#8211; those who can actually taste the supposed superiority of a sparkling white wine from Champagne, France can spend the extra for this exclusively-priced product, while everyone else can continue to celebrate with other, satisfactory brands and be no worse for it.</p>

<p>It first gained popularity across Argentina for producing potent, inky reds with rich, smooth tannins that were both powerfully flavorful and easy to drink. Yet even 10 years ago, there were only a few bottles of any Argentine wine likely to be found in a U.S. wine store. Then, something happened. As the quality improved, common wine-drinkers realized that these affordable Argentinean Malbecs were easy to drink, have accessible flavor profiles that are fun to identify but not overly astringent nor too complex, and taste great. Since 2005, The New York Times reports that &#8220;shipments of Argentine malbec to the United States have quintupled.&#8221; Part of the story is that while the average European wine has gotten more expensive due to the relatively weaker dollar, this has not happened to those from South America. This economic reality just served to emphasize that Malbecs are perfectly-designed to appeal to the average wine drinker. </p>
<p>Straightforward, juicy, occasional nuanced but identifiable fruit flavors, and a reasonable price range have all served to make this little, disregarded wine into an international superstar that most stores can&#8217;t keep on the shelves. In a separate sauce pan bring stock to a simmer. Include tomato sauce, oregano, and salt. Add rice to broth. Bring to a simmer. Cover up. Lower heat and cook 15-20 minutes, depending on the kind of rice together with the instructions on the rice package and let rest for 5 mins. For wine serve a nice chilled Chenin Blanc or perhaps a fine Gewurztraminer, again, depending on your penchant for wines.</p>

			<content:encoded><![CDATA[<p>California wine country has been a popular honeymoon and vacation destination for a while, but the movie &#8220;Sideways&#8221; drew a great deal of attention to the Santa Ynez Valley and surrounding area of Santa Barbara, and especially to the California Pinot Noir and Napa Valley. Pinot noir is one of the many incredible wines that growers and vintners in Napa and across California produce regularly, and it has been grown there with passion since the early 20th Century. </p>
<p>The history of the Napa Valley and the Pinot grape reads like a story about an inevitable meeting. This grape was cultivated in France, legend says by monks until the French revolution. It thrives in mildly cold and wetter climates. This makes the valleys of Northern California and Oregon ideal for the grape. The first commercial winery in Napa Valley was established in 1861, with hundreds more opening by the time prohibition began in the 1920s. It was during this time that Pinot Grapes took hold in the valley. After prohibition, a spirit of camaraderie pervaded across California among its wine makers. When the United States&#8217; most important post-prohibition wine-maker told vintners in California to start making Cabernet Sauvignon because it was better suited to the soil, it opened the way for small growers to focus on the classic French grape. This led to Pinot Noir being grown and produced in smaller batches, which contributed to growers&#8217; ability to pay closer attention to each year. By the 1950&#8242;s, Napa had begun to gain some notoriety across the entire country, if only among wine circles. </p>
<p>Then, in the 1970&#8242;s a Napa Valley Cabernet won critical acclaim at a blind taste test in France, and all of a sudden the entire region had the attention of the international wine community. All of a sudden, California Pinot Noir and Cabernet were expected to be able to stand up against wines grown in the country of the grape&#8217;s origin. However, for the next three decades California Pinot Noirs would remain in the shadow of the famous Cabernet as well as the Merlots of the region and a few other more aggressively marketed reds. </p>
<p>Then, the movie Sideways came out in 2004. It obviously drew attention to the Santa Ynez Valley, as mentioned. The main character also repeatedly argued that Pinot Noir is his favorite wine, and far better than Merlot. This single component of a movie about many things had a dramatic impact on California Pinots, and on the Napa Valley more than any other region because so many good Pinots come from there. </p>
<p>In fact, many argue that &#8220;Sideways&#8221; caused a very significant increase the sales of Pinot bottles in the $20 to $40 range. At the same time, it also depressed the prices of Merlots across the country. The increased attention and demand for the wine gave growers and vintners a stronger incentive to work on the grape and the wine, and increased market size. It allowed them to showcase the quality wines they had been able to develop since the time when the Pinot Grape began to only be grown by small farms. It has remained popular since.</p>
